Watermelon Limeade


I really love having fresh fruit drinks in the summer; my mom always makes fresh juice everyday during the summer months, with whatever fruit we have at home, whether it’s pineapple, mango, or strawberries, to name a few. With all the abundance of fresh produce, it would be ridiculous to not enjoy a glass of freshly made juice or lemonade…it would also be ridiculous not to enjoy both at the same time…

This watermelon limeade is one of my favorite drinks ever.  I really love limeade; it has a different flavor in comparison to lemonade, and when paired with fresh watermelon juice, it becomes the perfect refreshing drink to enjoy on a hot summer day.

The fact that it’s bright pink also makes it awesome.



Watermelon Limeade
Adapted from Smitten Kitchen

Ingredients

·      1 cup freshly squeezed lime juice *
·      2 cups fresh watermelon juice, strained for seeds
·      10-12 tablespoons simple syrup (depending on taste) **
·      2 ½ cups cold water
·      ice

Directions

Combine all the ingredients together in a large glass pitcher and stir together.  Serve the watermelon limeade over ice.



* Get the most out of your limes: to get the most juice possible from your limes, stick them in the microwave for ten seconds, and then roll them around a bit before cutting them in half.  You’ll get much more juice out this way.

** Make your own simple syrup at home: there’s no reason to buy store bought simple syrup when you can make it at home just as easily.  Simply simmer together one part water and one part sugar until the sugar has dissolved, and let cool completely.  I used half a cup of each for this batch of limeade, and it made the perfect amount of simple syrup to sweeten the limeade (adjust this to your own tastes, obviously).
